The Washington Post quoted food science professor Ronald Pegg in an article about the science of coffee.
“Coffee’s main attributes are bitterness, acidity and body, also known as mouth-feel,” said Pegg, who teaches an introductory course about the beverage. “The key is to get these three attributes in balance.”
